Vinification and Maturation<\/h5>\n\n

Prefermentative cryomaceration aims to extract sweet tannins, an essential prerogative for Sagrantino grapes. Fermentation is carried out at a constant temperature through modern temperature control, pumping over is frequent in the early days. After racking, the wine settles in steel vats for a few days, before being moved to the barriques where it undergoes malolactic fermentation; finally, it faces the aging in large barrels and a long refinement in bottle. <\/p>\n\n

Tasting notes<\/h5>\n\n

The ruby red color is very intense, impenetrable by light, consistent. The nose is broad: from blackberry jam, a varietal expression of Sagrantino, we arrive at black pepper, passing through vegetable facets, hints of cocoa and coffee, balsamic notes, pipe tobacco. In the mouth the robustness of the wine is perceived, the freshness is remarkable, and the tannin is straight on the legs, ready to face a long aging. Soft, like all the wines in the cellar, it has a sweet finish and an unforgettable persistence. <\/p>\n\n
